THE MUSHROOMS. THE MUSHROOMS!
Mushrooms are good but also useful!
They absorb pollutants and pesticides, thus helping to maintain a quality soil.
The myth tells that Perseus, a Greek hero, managed to recover water after a long journey thanks to a mushroom hat.
Thanks to this episode, arose the colony of Mycenae, so called precisely because translation of "mushroom" in Greek!
Mushrooms can be used in many ways, for example in China they are used for liqueurs and herbal teas, "Lingzhi" or "Reishi", or to poison her husband, just as Agrippina, wife of the Roman emperor Claudius did; definitely not to replicate at home!!!
If you are attentive to your diet, you will like to know that mushrooms contain a lot of water and also minerals such as zinc, iron, phosphorus and copper.
HOW TO COOK:
The hats of many species of mushrooms, especially those of boletus and porcini mushrooms are great if passed on a hot plate.
Another perfect cooking for mushroom hats with gills, vesce and porcini mushrooms is to mpanarli and fry them.
Chanterelles and chanterelles, generally, are stewed for about 15/20 minutes
The mushroom should always be cooked little, with a few sauces that release easily, with a little tomato because it covers their taste but with many spices and smells that enhance it.
For the nails it is advisable instead to cook for at least 25 minutes because in them there is a toxin, not lethal but harmful, that dies only after a prolonged cooking.
It is also recommended not to put raw nails in the freezer, because the toxin present would not die even after a long cooking.
To make a sauce or a mushroom risotto, do not put them in a saucepan at the beginning of the preparation because cooking too much, they would become woody.
Cook the mushrooms separately, season them and add them only 2/3 minutes before.
